Ingredients

- 1 cup granulated sugar
- 1/3 cup water
- 1/4 teaspoon cream of tartar
- 1/2 teaspoon peppermint extract
- Red food coloring
Instructions
- Combine sugar, water, and cream of tartar in a saucepan.
- Heat over medium heat, stirring until sugar dissolves.
- Stop stirring and allow the mixture to boil until it reaches 300°F (hard crack stage).
- Remove from heat and stir in peppermint extract.
- Divide mixture in half, coloring one half with red food coloring.
- Pour both mixtures onto a greased baking sheet.
- Allow to cool slightly, then score into pieces.
- Let cool completely before breaking into pieces.

- Use a candy thermometer for accuracy.
- Store in an airtight container.
- Adjust peppermint extract to taste.
